Romanian Bean Soup (Ciorbă de Fasole)

Ingredients
- 1 pound dried white beans
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon paprika
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons vinegar
Instructions
- Rinse the dried white beans and soak them in water overnight.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened.
- Add the minced garlic, bay leaf, and paprika to the pot. Stir and cook for another minute.
- Drain the soaked beans and add them to the pot. Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 1 hour, or until the beans are tender.
- Stir in the vinegar and season with salt and pepper to taste.
- Remove the bay leaf before serving.
