Romanian Bean Soup (Ciorbă de Fasole)

Ingredients

  • 1 pound dried white beans
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon paprika
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar

Instructions

  1. Rinse the dried white beans and soak them in water overnight.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened.
  3. Add the minced garlic, bay leaf, and paprika to the pot. Stir and cook for another minute.
  4. Drain the soaked beans and add them to the pot. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 1 hour, or until the beans are tender.

  7. Remove the bay leaf before serving.
