Ingredients

  • 1 lb (450g) beef stew meat, cubed
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 3 cups beef broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the paprika and dried thyme, then add the carrots, potatoes, bell pepper, and tomatoes. Season with salt and pepper.
  4. Pour in the beef broth and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for 2 hours, or until the beef is tender and the vegetables are cooked through.
