Romanian Cabbage Soup (Ciorbă de Varză)

Ingredients

  • 1 medium head of cabbage, shredded
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1/4 cup of rice
  • 6 cups of vegetable broth
  • 2 tablespoons of tomato paste
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the shredded cabbage, carrots, and potatoes to the pot and cook for 5 minutes.
  3. Stir in the rice, vegetable broth, tomato paste, bay leaf, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
  5. Remove the bay leaf and adjust the seasoning if needed.
  6. Serve hot, garnished with fresh parsley.
