Romanian Cabbage Soup (Ciorbă de Varză)
Ciorbă de Varză is a traditional Romanian cabbage soup that is both hearty and comforting. This soup is packed with flavor and is perfect for a cold winter day.
Ingredients
- 1 medium head of cabbage, shredded
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1/4 cup of rice
- 6 cups of vegetable broth
- 2 tablespoons of tomato paste
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the shredded cabbage, carrots, and potatoes to the pot and cook for 5 minutes.
- Stir in the rice, vegetable broth, tomato paste, bay leaf, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve hot, garnished with fresh parsley.
