Romanian Chicken and Dumplings (Supă de Pui cu Găluşte)
Supă de Pui cu Găluşte is a traditional Romanian chicken soup with fluffy dumplings that is perfect for a comforting and hearty meal.
Ingredients
- 1 whole chicken, cut into pieces
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 8 cups chicken broth
- 1 cup all-purpose flour
- 2 eggs
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring the chicken broth to a boil.
- Add the chicken pieces, carrots, celery, onion, and garlic to the pot. Reduce the heat and simmer for 30 minutes.
- While the soup is simmering, prepare the dumplings by mixing the flour, eggs, and parsley in a bowl to form a dough. Roll the dough into small balls.
- Add the dumplings to the pot and continue to simmer for an additional 15 minutes.
- Remove the chicken pieces from the pot, shred the meat, and return it to the soup. Season with salt and pepper to taste.
