Ingredients

  • 1.5 lbs (700g) chicken, cut into pieces
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb (450g) mushrooms, sliced
  • 2 tbsp (30ml) vegetable oil
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) tomato sauce
  • 1 tsp (5g) paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the chicken pieces to the pot and brown them on all sides.
  4. Stir in the sliced mushrooms and cook for a few minutes until they start to release their juices.
  5. Pour in the chicken broth and tomato sauce, then add the paprika, salt, and pepper. Stir to combine.
  6. Cover the pot and let the stew simmer for about 45 minutes, or until the chicken is cooked through and tender.
  7. Adjust the seasoning if needed, then serve the Tocană de Pui cu Ciuperci hot, garnished with fresh herbs if desired.
