Romanian Chicken and Mushroom Stew (Tocană de Pui cu Ciuperci)
Tocană de Pui cu Ciuperci is a traditional Romanian chicken and mushroom stew that is hearty, flavorful, and perfect for a cozy meal.
Ingredients
- 1.5 lbs (700g) chicken, cut into pieces
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 lb (450g) mushrooms, sliced
- 2 tbsp (30ml) vegetable oil
- 1 cup (240ml) chicken broth
- 1 cup (240ml) tomato sauce
- 1 tsp (5g) paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the sliced mushrooms and cook for a few minutes until they start to release their juices.
- Pour in the chicken broth and tomato sauce, then add the paprika, salt, and pepper. Stir to combine.
- Cover the pot and let the stew simmer for about 45 minutes, or until the chicken is cooked through and tender.
- Adjust the seasoning if needed, then serve the Tocană de Pui cu Ciuperci hot, garnished with fresh herbs if desired.
