Romanian Fish Soup (Ciorbă de Peşte)
Ciorbă de Peşte is a traditional Romanian fish soup that is packed with flavor and perfect for warming up on a chilly day.
Ingredients
- 1 lb fish fillets, such as carp or trout
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 1/4 cup rice
- 1/4 cup fresh dill, chopped
- 2 bay leaves
- Salt and pepper to taste
- 1/4 cup vinegar
Instructions
- In a large pot, bring 8 cups of water to a boil.
- Add the fish fillets and cook for 5 minutes, then remove the fish and set aside.
- Add the chopped onion, carrots, potatoes, bell pepper, and tomatoes to the pot and simmer for 15 minutes.
- Add the rice, dill, bay leaves, salt, and pepper, and continue to simmer for 10 minutes.
- Return the fish to the pot and cook for an additional 5 minutes.
- Stir in the vinegar and adjust the seasoning if needed.
- Serve hot and enjoy!
