Romanian Fish Soup (Ciorbă de Peşte)

Ingredients

  • 1 lb fish fillets, such as carp or trout
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1/4 cup rice
  • 1/4 cup fresh dill, chopped
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup vinegar

Instructions

  1. In a large pot, bring 8 cups of water to a boil.
  2. Add the fish fillets and cook for 5 minutes, then remove the fish and set aside.
  3. Add the chopped onion, carrots, potatoes, bell pepper, and tomatoes to the pot and simmer for 15 minutes.
  4. Add the rice, dill, bay leaves, salt, and pepper, and continue to simmer for 10 minutes.
  5. Return the fish to the pot and cook for an additional 5 minutes.
  6. Stir in the vinegar and adjust the seasoning if needed.
  7. Serve hot and enjoy!
