Romanian Lamb Stew with Dill (Tocană de Miel cu Mărar)
Tocană de Miel cu Mărar is a traditional Romanian lamb stew flavored with dill, perfect for a hearty and comforting meal.
Ingredients
- 1 kg lamb, cut into chunks
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon dried dill
- 2 bay leaves
- Salt and pepper to taste
- 500 ml beef or vegetable broth
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onions and cook until softened. Add the minced garlic and cook for another minute.
- Stir in the tomato paste, paprika, and dried dill, and cook for a few minutes.
- Return the browned lamb to the pot. Add the bay leaves and season with salt and pepper. Pour in the beef or vegetable broth.
- Bring the stew to a boil, then reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the lamb is tender.
- Adjust the seasoning if needed and serve the Tocană de Miel cu Mărar hot, garnished with fresh dill.
