Romanian Lamb Stew with Dill (Tocană de Miel cu Mărar)

Ingredients

  • 1 kg lamb, cut into chunks
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried dill
  • 2 bay leaves
  • Salt and pepper to taste
  • 500 ml beef or vegetable broth
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onions and cook until softened. Add the minced garlic and cook for another minute.
  3. Stir in the tomato paste, paprika, and dried dill, and cook for a few minutes.
  4. Return the browned lamb to the pot. Add the bay leaves and season with salt and pepper. Pour in the beef or vegetable broth.
  5. Bring the stew to a boil, then reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the lamb is tender.
  6. Adjust the seasoning if needed and serve the Tocană de Miel cu Mărar hot, garnished with fresh dill.
