Romanian Mushroom and Potato Soup (Ciorbă de Ciuperci cu Cartofi)
Ciorbă de Ciuperci cu Cartofi is a traditional Romanian soup that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 500g mushrooms, sliced
- 3 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 1/4 cup rice
- 1/4 cup fresh dill, chopped
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery. Sauté for 5 minutes until the vegetables are softened.
- Add the mushrooms and cook for another 5 minutes.
- Add the diced potatoes, rice, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the potatoes are tender.
- Stir in the chopped dill and season with salt and pepper to taste.
