Romanian Plum Dumplings (Găluşte cu Prune)

Ingredients

  • 2 cups mashed potatoes
  • 2 cups all-purpose flour

  • 8 plums, pitted and halved
  • 1/2 cup breadcrumbs
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter

Instructions

  1. In a large bowl, mix together the mashed potatoes, flour, and salt to form a dough.
  2. Divide the dough into 8 equal portions and flatten each portion into a small disc.
  3. Place a plum half in the center of each disc and wrap the dough around the plum, forming a smooth ball.
  4. In a separate bowl, mix together the breadcrumbs, sugar, and cinnamon.
  5. In a large pot of boiling water, carefully drop the dumplings and cook for 15-20 minutes, or until they float to the surface.
  6. Remove the dumplings from the water and roll them in the breadcrumb mixture.
  7. In a skillet, melt the butter over medium heat and lightly brown the dumplings on all sides.
  8. Serve the dumplings warm, sprinkled with additional sugar if desired.
