Romanian Pumpkin Soup (Ciorbă de Dovleac)
Ciorbă de Dovleac is a traditional Romanian pumpkin soup that is both hearty and comforting. This soup is perfect for the fall season and is packed with delicious flavors.
Ingredients
- 1 small pumpkin, peeled and cubed
- 2 carrots, diced
- 1 onion, chopped
- 3 potatoes, peeled and diced
- 2 tomatoes, chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1/4 cup rice
- 6 cups vegetable broth
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and bell pepper. Sauté for 5 minutes until the vegetables are slightly softened.
- Add the garlic and sauté for another 2 minutes.
- Add the pumpkin, potatoes, tomatoes, and rice to the pot. Stir to combine with the sautéed vegetables.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the vegetables are tender.
- Season the soup with salt and pepper to taste.
- Garnish with chopped parsley before serving.
