Romanian Pumpkin Soup (Ciorbă de Dovleac)

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 potatoes, peeled and diced
  • 2 tomatoes, chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1/4 cup rice
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and bell pepper. Sauté for 5 minutes until the vegetables are slightly softened.
  3. Add the garlic and sauté for another 2 minutes.
  4. Add the pumpkin, potatoes, tomatoes, and rice to the pot. Stir to combine with the sautéed vegetables.
  5. Pour in the vegetable broth and bring the soup to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the vegetables are tender.
  7. Season the soup with salt and pepper to taste.
  8. Garnish with chopped parsley before serving.
