Romanian Stuffed Tomatoes (Roşii Umplute)
Roşii Umplute, or Romanian Stuffed Tomatoes, are a delicious traditional dish that combines the freshness of tomatoes with a flavorful filling. This recipe is perfect for a light and satisfying meal.
Ingredients
- 4 large tomatoes
- 1 cup cooked rice
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 1/2 cup corn kernels
- 1/2 cup peas
- 1/2 cup grated cheese
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cut the tops off the tomatoes and scoop out the pulp, leaving a shell. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
- In a pan, heat the olive oil and sauté the onion and bell pepper until softened.
- Add the corn, peas, and cooked rice to the pan. Season with paprika, salt, and pepper. Cook for a few minutes until everything is well combined.
- Remove the pan from the heat and stir in the grated cheese.
- Preheat the oven to 375°F (190°C).
- Stuff the tomatoes with the rice and vegetable mixture and place them in a baking dish.
- Bake for 30-35 minutes until the tomatoes are tender and the filling is golden brown.
