Romanian Stuffed Tomatoes (Roşii Umplute)

Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1/2 cup corn kernels
  • 1/2 cup peas
  • 1/2 cup grated cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cut the tops off the tomatoes and scoop out the pulp, leaving a shell. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
  2. In a pan, heat the olive oil and sauté the onion and bell pepper until softened.
  3. Add the corn, peas, and cooked rice to the pan. Season with paprika, salt, and pepper. Cook for a few minutes until everything is well combined.
  4. Remove the pan from the heat and stir in the grated cheese.
  5. Preheat the oven to 375°F (190°C).
  6. Stuff the tomatoes with the rice and vegetable mixture and place them in a baking dish.
  7. Bake for 30-35 minutes until the tomatoes are tender and the filling is golden brown.
  8. Serve the Roşii Umplute hot and enjoy!
