Romanian-style Ratatouille (Zacuscă)

Ingredients

  • 2 eggplants, roasted and peeled
  • 3 red bell peppers, roasted and peeled
  • 6 tomatoes, peeled and chopped
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup sunflower oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the sunflower oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the chopped tomatoes and cook for 10 minutes, stirring occasionally.
  4. Add the roasted and peeled eggplants and bell peppers, and stir to combine.
  5. Season with salt and pepper, and cook for an additional 30 minutes, stirring occasionally.
  6. Remove from heat and let it cool before serving.
