Romanian-style Ratatouille (Zacuscă)
Zacuscă is a traditional Romanian dish that resembles ratatouille, made with roasted eggplant, bell peppers, and tomatoes. It is typically enjoyed as a spread on bread or as a side dish.
Ingredients
- 2 eggplants, roasted and peeled
- 3 red bell peppers, roasted and peeled
- 6 tomatoes, peeled and chopped
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1/4 cup sunflower oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the sunflower oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chopped tomatoes and cook for 10 minutes, stirring occasionally.
- Add the roasted and peeled eggplants and bell peppers, and stir to combine.
- Season with salt and pepper, and cook for an additional 30 minutes, stirring occasionally.
- Remove from heat and let it cool before serving.
