Romanian Tomato Soup (Ciorbă de Roşii)
Ciorbă de Roşii is a traditional Romanian tomato soup that is both refreshing and comforting. This soup is packed with the flavors of ripe tomatoes, fresh herbs, and a hint of sourness from vinegar or lemon juice.
Ingredients
- 1 kg ripe tomatoes, chopped
- 1 onion, finely chopped
- 2-3 garlic cloves, minced
- 1 medium potato, peeled and diced
- 1 carrot, diced
- 1 bell pepper, diced
- 2 tbsp vegetable oil
- 1 tbsp vinegar or lemon juice
- 1 bay leaf
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
- Add the diced potato, carrot, and bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
- Stir in the chopped tomatoes, bay leaf, and paprika. Season with salt and pepper, then pour in enough water to cover the vegetables.
- Simmer the soup for about 20-25 minutes, or until all the vegetables are tender.
- Stir in the vinegar or lemon juice, then taste and adjust the seasoning if needed.
- Remove the bay leaf, and serve the soup hot, garnished with fresh parsley.
