Romanian Tomato Soup (Ciorbă de Roşii)

Ingredients

  • 1 kg ripe tomatoes, chopped
  • 1 onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1 medium potato, peeled and diced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 2 tbsp vegetable oil
  • 1 tbsp vinegar or lemon juice
  • 1 bay leaf
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
  2. Add the diced potato, carrot, and bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
  3. Stir in the chopped tomatoes, bay leaf, and paprika. Season with salt and pepper, then pour in enough water to cover the vegetables.
  4. Simmer the soup for about 20-25 minutes, or until all the vegetables are tender.
  5. Stir in the vinegar or lemon juice, then taste and adjust the seasoning if needed.
  6. Remove the bay leaf, and serve the soup hot, garnished with fresh parsley.
