Ingredients

  • 2 eggplants, roasted and peeled
  • 3 red bell peppers, roasted and peeled
  • 2 onions, finely chopped
  • 4 tomatoes, peeled and chopped
  • 1/2 cup sunflower oil
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Roast the eggplants and red bell peppers until the skin is charred. Let them cool, then peel and chop them.
