Rondon Delight

Ingredients

  • 1 lb white fish fillets
  • 1 lb shrimp, peeled and deveined
  • 2 cups coconut milk
  • 2 cups fish or vegetable broth
  • 1 onion, chopped
  • 2 bell peppers, sliced
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, sliced
  • 1 cup yuca, peeled and diced
  • 1 cup sweet potato, peeled and diced
  • 1 cup corn kernels
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the coconut milk and fish or vegetable broth. Bring to a simmer over medium heat.
  2. Add the onion, bell peppers, tomatoes, garlic, and jalapeño to the pot. Cook for 5 minutes, stirring occasionally.
  3. Add the yuca, sweet potato, and corn to the pot. Simmer for 15 minutes, or until the vegetables are tender.
  4. Gently add the fish fillets and shrimp to the pot. Cook for 5-7 minutes, or until the seafood is cooked through.
  5. Season the stew with salt and pepper, to taste. Stir in the fresh cilantro just before serving.
