Rondon Delight
Rondon Delight is a traditional Nicaraguan seafood stew that is packed with flavor and perfect for a cozy evening meal. This hearty dish is a staple in Nicaraguan cuisine and is sure to warm your soul.
Ingredients
- 1 lb white fish fillets
- 1 lb shrimp, peeled and deveined
- 2 cups coconut milk
- 2 cups fish or vegetable broth
- 1 onion, chopped
- 2 bell peppers, sliced
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 jalapeño, sliced
- 1 cup yuca, peeled and diced
- 1 cup sweet potato, peeled and diced
- 1 cup corn kernels
- 2 tbsp fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the coconut milk and fish or vegetable broth. Bring to a simmer over medium heat.
- Add the onion, bell peppers, tomatoes, garlic, and jalapeño to the pot. Cook for 5 minutes, stirring occasionally.
- Add the yuca, sweet potato, and corn to the pot. Simmer for 15 minutes, or until the vegetables are tender.
- Gently add the fish fillets and shrimp to the pot. Cook for 5-7 minutes, or until the seafood is cooked through.
- Season the stew with salt and pepper, to taste. Stir in the fresh cilantro just before serving.
