Rookworst Stuffed Peppers

Ingredients
- 4 large bell peppers
- 1 lb rookworst (smoked sausage), diced
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup grated Gouda cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the diced rookworst, cooked rice, chopped onion, minced garlic, and half of the tomato sauce. Season with salt and pepper.
- Stuff the bell peppers with the rookworst mixture and place them in a baking dish.
- Top the stuffed peppers with the remaining tomato sauce and sprinkle the grated Gouda cheese over the top.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is golden brown.
- Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
