Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cut the tops off the tomatoes and scoop out the pulp. Sprinkle the insides with salt and let them drain upside down.
  2. In a bowl, mix the cooked rice, chopped onion, feta cheese, parsley, salt, and pepper.
  3. Stuff the tomatoes with the rice mixture and place the tomato tops back on.
  4. Heat the olive oil in a pan over medium heat. Place the stuffed tomatoes in the pan and cook for 5 minutes.
  5. Add 1/2 cup of water to the pan, cover, and simmer for 30-35 minutes, until the tomatoes are tender.
  6. Serve the stuffed tomatoes hot, garnished with additional parsley if desired.
