Rosii Umplute (aromanian Stuffed Tomatoes)
Rosii umplute, or Aromanian Stuffed Tomatoes, are a delicious traditional dish from Aromanian cuisine. This recipe combines the freshness of ripe tomatoes with a flavorful filling, creating a satisfying and hearty meal.
Ingredients
- 4 large tomatoes
- 1 cup cooked rice
- 1 onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cut the tops off the tomatoes and scoop out the pulp. Sprinkle the insides with salt and let them drain upside down.
- In a bowl, mix the cooked rice, chopped onion, feta cheese, parsley, salt, and pepper.
- Stuff the tomatoes with the rice mixture and place the tomato tops back on.
- Heat the olive oil in a pan over medium heat. Place the stuffed tomatoes in the pan and cook for 5 minutes.
- Add 1/2 cup of water to the pan, cover, and simmer for 30-35 minutes, until the tomatoes are tender.
- Serve the stuffed tomatoes hot, garnished with additional parsley if desired.
