Roti Canai Extravaganza
Roti Canai is a popular Malaysian flatbread that is crispy on the outside and soft on the inside. This Roti Canai Extravaganza recipe takes the traditional dish to the next level with a variety of delicious fillings and toppings.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon condensed milk
- 1 cup water
- 2 tablespoons ghee
- 1 cup cooked chicken, shredded
- 1 cup potatoes, boiled and mashed
- 1 cup onion, finely chopped
- 1 cup mixed bell peppers, diced
- 1 cup cheese, shredded
- 1 cup curry sauce
Instructions
- In a large bowl, mix the all-purpose flour, salt, condensed milk, and water to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
- Divide the dough into small balls. Roll each ball into a thin sheet, then spread ghee on top. Roll the sheet into a log, then coil it into a ball again. Repeat with the remaining dough and ghee.
- Heat a skillet over medium heat. Roll out each coiled ball into a thin circle and cook on the skillet until golden brown and crispy on both sides.
- For the fillings, mix the cooked chicken, mashed potatoes, chopped onion, diced bell peppers, and shredded cheese in separate bowls.
- To assemble, place a cooked roti canai on a plate. Spread a layer of curry sauce, then add a portion of each filling. Fold the roti canai into a square parcel.
- Serve the roti canai extravaganza with extra curry sauce on the side.
