Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon condensed milk
- 1 cup water
- 2 tablespoons ghee or butter
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 can (14 oz) coconut milk
- 1 teaspoon sugar
- Salt to taste
Instructions
- In a large bowl, mix the all-purpose flour, salt, condensed milk, and water to form a dough. Knead the dough for 5-7 minutes until smooth. Divide the dough into small balls, coat them with ghee, and let them rest for 1 hour.
- On a floured surface, flatten each ball of dough into a thin sheet. Fold the edges of the sheet to form a square, then fold the square into a triangle. Repeat with the remaining dough balls.
- Heat a skillet over medium heat and cook the flattened dough triangles until golden brown and crispy on both sides. Set aside.
- In a separate pan, heat ghee and sauté the diced onion and minced garlic until fragrant. Add the curry powder and cook for 1-2 minutes.
- Pour in the coconut milk, sugar, and salt. Simmer the curry sauce for 10-15 minutes until it thickens.
- Serve the roti canai with the warm curry sauce for dipping or pouring over the flatbread.
