Ingredients

  • 4 baguette rolls
  • 8 eggs
  • 1 onion, finely chopped
  • 1 red bell pepper, thinly sliced
  • 200g minced meat (chicken, beef, or mutton)
  • 2 tbsp tomato ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp chili sauce
  • Salt and pepper to taste
  • Butter for frying

Instructions

  1. In a bowl, beat the eggs and mix in the chopped onion, sliced bell pepper, minced meat, tomato ketchup, Worcestershire sauce, chili sauce, salt, and pepper.
  2. Cut the baguette rolls in half lengthwise, without cutting all the way through.
  3. Spread the egg mixture evenly on the cut side of the baguette rolls.
  4. Heat a pan over medium heat and add a knob of butter.
  5. Place the filled baguette rolls in the pan, egg side down, and cook until the bottom is golden brown and crispy.
  6. Flip the Roti John and cook the other side until golden brown and the egg is fully cooked.
  7. Remove from the pan and let it cool for a minute before slicing and serving.
