Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup water
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 2 potatoes, peeled and diced
  • 1 carrot, diced
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour, baking powder, and salt. Gradually add water and knead the mixture to form a smooth dough. Divide the dough into 4 equal portions and shape them into balls. Let the dough rest for 15 minutes.
  2. Heat vegetable oil in a large skillet over medium heat. Add the onion and garlic, and sauté until they are soft and fragrant.
  3. Sprinkle curry powder, cumin, and turmeric over the onion and garlic mixture. Stir well to combine the spices.
  4. Add the potatoes and carrots to the skillet, and cook for 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and coconut milk. Season with salt and pepper. Simmer the mixture for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
  6. While the curry filling is simmering, roll out each dough ball into a thin, round roti shape.
  7. Heat a non-stick skillet over medium heat. Cook each roti for 1-2 minutes on each side, or until they are lightly browned and puffed up.
  8. To serve, place a generous scoop of the curry filling onto each roti. Fold the roti over the filling to create a wrap, and enjoy!
