Roti Rendezvous

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup water
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 2 potatoes, peeled and diced
- 1 carrot, diced
- 1 cup vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour, baking powder, and salt. Gradually add water and knead the mixture to form a smooth dough. Divide the dough into 4 equal portions and shape them into balls. Let the dough rest for 15 minutes.
- Heat vegetable oil in a large skillet over medium heat. Add the onion and garlic, and sauté until they are soft and fragrant.
- Sprinkle curry powder, cumin, and turmeric over the onion and garlic mixture. Stir well to combine the spices.
- Add the potatoes and carrots to the skillet, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and coconut milk. Season with salt and pepper. Simmer the mixture for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
- While the curry filling is simmering, roll out each dough ball into a thin, round roti shape.
- Heat a non-stick skillet over medium heat. Cook each roti for 1-2 minutes on each side, or until they are lightly browned and puffed up.
- To serve, place a generous scoop of the curry filling onto each roti. Fold the roti over the filling to create a wrap, and enjoy!
