Ingredients

  • 4 roti breads
  • 1 cup cooked chickpeas
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1/2 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 1/2 tsp turmeric powder
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. In a large skillet, heat the cooking oil over medium heat.
  2. Add the chopped onion and cook until softened.
  3. Stir in the cumin, curry, and turmeric powders, and cook for 1 minute.
  4. Add the chickpeas, shredded cabbage, and carrots. Cook for 5-7 minutes until the vegetables are tender.
  5. Season with salt and pepper, then add the diced tomato and chopped cilantro. Cook for an additional 2 minutes.
  6. Warm the roti breads on a separate skillet or directly over the stovetop flame.
  7. Divide the chickpea and vegetable filling among the warm roti breads.
  8. Roll up the roti, enclosing the filling, and secure with toothpicks if needed.
  9. Serve the Roti Roll-Ups hot and enjoy!
