Ingredients
- 4 roti breads
- 1 cup cooked chickpeas
- 1 onion, finely chopped
- 1 tomato, diced
- 1/2 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 1 tsp cumin powder
- 1 tsp curry powder
- 1/2 tsp turmeric powder
- Salt and pepper to taste
- 2 tbsp cooking oil
Instructions
- In a large skillet, heat the cooking oil over medium heat.
- Add the chopped onion and cook until softened.
- Stir in the cumin, curry, and turmeric powders, and cook for 1 minute.
- Add the chickpeas, shredded cabbage, and carrots. Cook for 5-7 minutes until the vegetables are tender.
- Season with salt and pepper, then add the diced tomato and chopped cilantro. Cook for an additional 2 minutes.
- Warm the roti breads on a separate skillet or directly over the stovetop flame.
- Divide the chickpea and vegetable filling among the warm roti breads.
- Roll up the roti, enclosing the filling, and secure with toothpicks if needed.
- Serve the Roti Roll-Ups hot and enjoy!
