Ingredients

  • 4 roti breads
  • 2 large potatoes, boiled and cubed
  • 1 cup cooked chickpeas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp curry powder
  • 1/2 tsp chili powder
  • 1 cup chopped mixed vegetables (bell peppers, carrots, green beans)
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat vegetable oil in a pan over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.
  2. Add cumin powder, turmeric powder, curry powder, and chili powder to the pan. Stir well to combine with the onion and garlic.
  3. Add the cubed potatoes, cooked chickpeas, and chopped mixed vegetables to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
  4. Warm the roti breads according to package instructions.
  5. Place a portion of the filling in the center of each roti bread. Fold the sides of the roti over the filling, then fold the bottom and top to create a wrap.
  6. Serve the roti wraps hot and enjoy!
