Ingredients
- 4 roti breads
- 2 large potatoes, boiled and cubed
- 1 cup cooked chickpeas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp curry powder
- 1/2 tsp chili powder
- 1 cup chopped mixed vegetables (bell peppers, carrots, green beans)
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Heat vegetable oil in a pan over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.
- Add cumin powder, turmeric powder, curry powder, and chili powder to the pan. Stir well to combine with the onion and garlic.
- Add the cubed potatoes, cooked chickpeas, and chopped mixed vegetables to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Warm the roti breads according to package instructions.
- Place a portion of the filling in the center of each roti bread. Fold the sides of the roti over the filling, then fold the bottom and top to create a wrap.
- Serve the roti wraps hot and enjoy!
