Royal Chicken Korma (lucknowi Shahi Murgh Korma)

Ingredients
- 1 kg chicken, cut into pieces
- 1 cup yogurt
- 1 cup onion, finely chopped
- 1/2 cup cashew nuts
- 1/4 cup ghee (clarified butter)
- 2 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1/2 tsp ground cardamom
- 1/4 tsp saffron strands
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Marinate the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, and salt. Let it sit for 30 minutes.
- Meanwhile, grind the cashew nuts into a fine paste using a food processor or mortar and pestle.
- Heat ghee in a large pot and sauté the chopped onions until golden brown.
- Add the marinated chicken and cook until the meat is tender and the yogurt is well incorporated.
- Stir in the cashew nut paste, garam masala, ground cardamom, and saffron strands. Simmer for another 10 minutes.
- Garnish with fresh coriander leaves before serving.
