Royal Cottage Cheese, also known as Shahi Paneer, is a rich and creamy dish that is a staple in Pakistani cuisine. This dish is made with paneer (cottage cheese) cooked in a luxurious, aromatic gravy, making it fit for royalty.

Royal Cottage Cheese (shahi Paneer)

Ingredients

  • 500g paneer (cottage cheese), cubed
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup cashew nuts, soaked
  • 1/4 cup cream
  • 1/4 cup ghee (clarified butter)
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a few minutes. Then, add the pureed tomatoes and cook until the ghee separates.
  3. In a blender, blend the soaked cashew nuts with a little water to form a smooth paste. Add this paste to the pan and cook for a few minutes.
  4. Add red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.
  5. Add the cubed paneer and cream. Mix gently to coat the paneer with the gravy. Cook for 5-7 minutes on low heat.
  6. Sprinkle garam masala and kasuri methi. Stir gently and cook for another 2-3 minutes.
  7. Garnish with fresh coriander leaves and serve hot with naan or rice.
