Royal Mutton Kebabs (shahi Galouti Kebab)

Ingredients

  • 500g mutton, minced
  • 2 onions, finely chopped
  • 4 green chilies, chopped
  • 2 tbsp ginger-garlic paste
  • 1/2 cup raw papaya, grated
  • 1/2 cup cashew nuts, ground
  • 1/2 cup yogurt
  • 1/2 tsp garam masala
  • 1/2 tsp cardamom powder
  • 1/2 tsp saffron strands
  • Salt to taste
  • 1/4 cup ghee
  • 1/4 cup fresh coriander leaves, chopped

Instructions

  1. In a large bowl, combine the minced mutton, onions, green chilies, ginger-garlic paste, grated raw papaya, ground cashew nuts, yogurt, garam masala, cardamom powder, saffron strands, and salt. Mix well and let it marinate for 2 hours.
  2. After marination, shape the mixture into small round kebabs.
  3. Heat ghee in a pan over medium heat. Fry the kebabs until they are golden brown on both sides.
  4. Garnish with fresh coriander leaves and serve hot.
