Royal Mutton Kebabs (shahi Galouti Kebab)
Royal Mutton Kebabs, also known as Shahi Galouti Kebab, are a classic dish from the Awadhi cuisine, known for its rich and aromatic flavors. These kebabs are incredibly tender and melt in your mouth, making them a perfect appetizer for any special occasion.
Ingredients
- 500g mutton, minced
- 2 onions, finely chopped
- 4 green chilies, chopped
- 2 tbsp ginger-garlic paste
- 1/2 cup raw papaya, grated
- 1/2 cup cashew nuts, ground
- 1/2 cup yogurt
- 1/2 tsp garam masala
- 1/2 tsp cardamom powder
- 1/2 tsp saffron strands
- Salt to taste
- 1/4 cup ghee
- 1/4 cup fresh coriander leaves, chopped
Instructions
- In a large bowl, combine the minced mutton, onions, green chilies, ginger-garlic paste, grated raw papaya, ground cashew nuts, yogurt, garam masala, cardamom powder, saffron strands, and salt. Mix well and let it marinate for 2 hours.
- After marination, shape the mixture into small round kebabs.
- Heat ghee in a pan over medium heat. Fry the kebabs until they are golden brown on both sides.
- Garnish with fresh coriander leaves and serve hot.
