Royal Okra (shahi Bhindi)

Ingredients
- 500g okra, washed and dried
- 1 cup onions, finely chopped
- 1 cup tomatoes, pureed
- 1/2 cup yogurt
- 1/4 cup cashew nuts, soaked and ground to a paste
- 2 tbsp ghee (clarified butter)
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the ghee separates.
- Now, add the yogurt, cashew paste, red chili powder, turmeric powder, and salt. Cook the masala until the ghee separates.
- Add the whole okra to the masala and gently mix to coat the okra with the masala.
- Cover and cook the okra on low heat until tender, stirring occasionally.
- Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
