Royal Okra (shahi Bhindi)

Ingredients

  • 500g okra, washed and dried
  • 1 cup onions, finely chopped
  • 1 cup tomatoes, pureed
  • 1/2 cup yogurt
  • 1/4 cup cashew nuts, soaked and ground to a paste
  • 2 tbsp ghee (clarified butter)
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the ghee separates.
  3. Now, add the yogurt, cashew paste, red chili powder, turmeric powder, and salt. Cook the masala until the ghee separates.
  4. Add the whole okra to the masala and gently mix to coat the okra with the masala.
  5. Cover and cook the okra on low heat until tender, stirring occasionally.
  6. Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
