Royal Paneer (shahi Paneer)
Royal Paneer, also known as Shahi Paneer, is a rich and creamy dish from North Indian cuisine that is fit for royalty. This dish is made with paneer (Indian cottage cheese) cooked in a luxurious, aromatic gravy made with cashews, cream, and a blend of fragrant spices.
Ingredients
- 250g paneer, cubed
- 1 cup onion, finely chopped
- 1 cup tomato, pureed
- 1/2 cup cashews, soaked
- 1/4 cup cream
- 2 tbsp ghee (clarified butter)
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp kasuri methi (dried fenugreek leaves)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and sauté the onions until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add the tomato puree and cook until the ghee separates.
- Blend the soaked cashews with a little water to make a smooth paste.
- Add the cashew paste to the pan and cook for a few minutes.
- Add red chili powder, turmeric powder, and salt. Mix well.
- Add the paneer cubes and cream. Simmer for 5-7 minutes.
- Sprinkle garam masala and kasuri methi. Mix gently.
- Garnish with fresh coriander leaves and serve hot.
