Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1/4 cup ghee (clarified butter)
  • 1 large onion, thinly sliced
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 whole cloves
  • 1/4 cup mixed nuts (cashews, almonds, and pistachios)
  • 1/4 cup mixed dried fruits (raisins, apricots, and dates)
  • 1/2 teaspoon saffron strands
  • 1/4 teaspoon ground turmeric
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the ghee over medium heat. Add the sliced onion and sauté until golden brown.
  3. Stir in the cinnamon stick, cardamom pods, and cloves, and cook for 1 minute to release their aroma.
  4. Add the mixed nuts and dried fruits to the pot, and sauté for 2-3 minutes until the nuts are lightly toasted.
  5. Stir in the drained rice, saffron strands, turmeric, and salt. Cook for 2-3 minutes, stirring gently to coat the rice with the spices.
  6. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork, then transfer to a serving dish. Garnish with fresh cilantro leaves before serving.
