Ingredients
- 2 cups basmati rice
- 4 cups water
- 1/4 cup ghee (clarified butter)
- 1 large onion, thinly sliced
- 1 cinnamon stick
- 4 green cardamom pods
- 4 whole cloves
- 1/4 cup mixed nuts (cashews, almonds, and pistachios)
- 1/4 cup mixed dried fruits (raisins, apricots, and dates)
- 1/2 teaspoon saffron strands
- 1/4 teaspoon ground turmeric
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat the ghee over medium heat. Add the sliced onion and sauté until golden brown.
- Stir in the cinnamon stick, cardamom pods, and cloves, and cook for 1 minute to release their aroma.
- Add the mixed nuts and dried fruits to the pot, and sauté for 2-3 minutes until the nuts are lightly toasted.
- Stir in the drained rice, saffron strands, turmeric, and salt. Cook for 2-3 minutes, stirring gently to coat the rice with the spices.
- Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork, then transfer to a serving dish. Garnish with fresh cilantro leaves before serving.
