Roz Belzafraan (moroccan Saffron Rice)
Roz Belzafraan, or Moroccan Saffron Rice, is a traditional Berber dish that is simple to make and bursting with flavor. This aromatic rice dish is perfect for accompanying a variety of main courses or as a standalone meal.
Ingredients
- 2 cups long-grain white rice
- 3 1/2 cups water
- 1/4 teaspoon saffron threads
- 1 teaspoon salt
- 2 tablespoons olive oil
Instructions
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.
- Rinse the rice under cold water until the water runs clear, then drain well.
- In a large pot, combine the rice, saffron water, salt, and olive oil. Stir well to combine.
- Add the 3 1/2 cups of water to the pot and bring to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and let it sit, covered, for 5 minutes before serving.
