Ingredients

  • 2 cups long-grain white rice
  • 3 1/2 cups water
  • 1/4 teaspoon saffron threads
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.
  2. Rinse the rice under cold water until the water runs clear, then drain well.
  3. In a large pot, combine the rice, saffron water, salt, and olive oil. Stir well to combine.
  4. Add the 3 1/2 cups of water to the pot and bring to a boil over high heat.
  5. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork and let it sit, covered, for 5 minutes before serving.
