Ingredients

  • 1 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon ground cardamom
  • 2 tablespoons rosewater
  • Slivered almonds and pistachios for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large pot, combine the rinsed rice, whole milk, sugar, and ground cardamom.
  3. Place the pot over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
  4. Reduce the heat to low and let the rice pudding cook for 30-35 minutes, stirring frequently to prevent the rice from sticking to the bottom of the pot.
  5. Once the rice is cooked and the mixture has thickened, remove the pot from the heat and stir in the rosewater.
  6. Divide the rice pudding into serving bowls and garnish with slivered almonds and pistachios.
  7. Chill the Roz Bhaleeb in the refrigerator for at least 2 hours before serving.
