Ingredients

  • 2 cups jasmine rice
  • 1 ripe mango, diced
  • 1 can (14 oz) coconut milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut (optional, for garnish)

Instructions

  1. In a pot, combine the jasmine rice, coconut milk, sugar, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pot. Let it simmer for 20 minutes.
  3. After 20 minutes, add the diced mango to the pot and gently fold it into the rice. Cover and let it cook for an additional 5-10 minutes until the rice is fluffy and the mango is heated through.
  4. Once done, fluff the rice with a fork and transfer to a serving dish. Sprinkle with shredded coconut if desired.
