Roz (malakal Mango Coconut Rice)
Roz, also known as Malakal Mango Coconut Rice, is a popular South Sudanese dish that combines the sweetness of mango with the creaminess of coconut milk, all infused into fluffy rice. This dish is perfect for special occasions or as a comforting meal any day of the week.
Ingredients
- 2 cups jasmine rice
- 1 ripe mango, diced
- 1 can (14 oz) coconut milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/4 cup shredded coconut (optional, for garnish)
Instructions
- In a pot, combine the jasmine rice, coconut milk, sugar, and salt.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pot. Let it simmer for 20 minutes.
- After 20 minutes, add the diced mango to the pot and gently fold it into the rice. Cover and let it cook for an additional 5-10 minutes until the rice is fluffy and the mango is heated through.
- Once done, fluff the rice with a fork and transfer to a serving dish. Sprinkle with shredded coconut if desired.
