Rösti Surprise (Rösti Überraschung)

Ingredients

  • 4 large potatoes, grated
  • 1 onion, finely chopped
  • 200g bacon, diced
  • 100g Gruyère cheese, grated
  • 4 eggs
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the grated potatoes with the chopped onion, salt, and pepper.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the potato mixture and press it down firmly to form a large pancake. Cook for 10 minutes or until the bottom is golden brown.
  4. Flip the Rösti and cook for another 10 minutes until the other side is golden brown.
  5. In a separate skillet, cook the diced bacon until crispy.
  6. Once the Rösti is cooked, transfer it to a baking sheet. Sprinkle the grated Gruyère cheese on top, then make 4 indentations in the Rösti and crack an egg into each indentation.
  7. Place the Rösti in the oven and bake for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  8. Sprinkle the crispy bacon on top of the Rösti and serve hot.
