Rösti Surprise (Rösti Überraschung)
Rösti Überraschung, or Rösti Surprise, is a classic dish from Liechtensteiner cuisine that combines the crispy goodness of Rösti with a delightful surprise filling. This dish is perfect for a hearty breakfast or a comforting dinner.
Ingredients
- 4 large potatoes, grated
- 1 onion, finely chopped
- 200g bacon, diced
- 100g Gruyère cheese, grated
- 4 eggs
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the grated potatoes with the chopped onion, salt, and pepper.
- Heat the vegetable oil in a large skillet over medium heat. Add the potato mixture and press it down firmly to form a large pancake. Cook for 10 minutes or until the bottom is golden brown.
- Flip the Rösti and cook for another 10 minutes until the other side is golden brown.
- In a separate skillet, cook the diced bacon until crispy.
- Once the Rösti is cooked, transfer it to a baking sheet. Sprinkle the grated Gruyère cheese on top, then make 4 indentations in the Rösti and crack an egg into each indentation.
- Place the Rösti in the oven and bake for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- Sprinkle the crispy bacon on top of the Rösti and serve hot.
