Rukuruku (coconut Lime Shrimp)

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 red chili, thinly sliced
  • 2 tablespoons coconut oil
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the coconut oil over medium heat.
  2. Add the chopped onion, minced garlic, and sliced chili. Sauté until the onion is translucent.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the shrimp to the pan and cook for 5-7 minutes, or until they turn pink and opaque.
  5. Stir in the lime juice and zest, then season with salt and pepper to taste.
  6. Remove from heat and serve the Rukuruku hot, garnished with additional lime zest and sliced chili if desired.
