Rukuruku (coconut Lime Shrimp)
Rukuruku is a traditional Solomon Islands dish that features succulent shrimp cooked in a flavorful coconut and lime sauce. This dish is bursting with tropical flavors and is perfect for a light and refreshing meal.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 1 red chili, thinly sliced
- 2 tablespoons coconut oil
- Salt and pepper to taste
Instructions
- In a large pan, heat the coconut oil over medium heat.
- Add the chopped onion, minced garlic, and sliced chili. Sauté until the onion is translucent.
- Pour in the coconut milk and bring to a simmer.
- Add the shrimp to the pan and cook for 5-7 minutes, or until they turn pink and opaque.
- Stir in the lime juice and zest, then season with salt and pepper to taste.
- Remove from heat and serve the Rukuruku hot, garnished with additional lime zest and sliced chili if desired.
