Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 tablespoons curry powder
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Sprinkle the curry powder and turmeric over the onion and garlic, and stir to combine.
  4. Add the shrimp to the pan and cook for 2-3 minutes, until they start to turn pink.
  5. Pour in the coconut milk and stir to combine. Let the curry simmer for 10-15 minutes, until the shrimp are fully cooked and the sauce has thickened.
  6. Season with salt and pepper to taste.
  7. Serve the Rukuruku hot over steamed rice or with crusty bread.
