Rukuruku (coconut Shrimp Curry)
Rukuruku, also known as Coconut Shrimp Curry, is a traditional dish from the Solomon Islands. This flavorful and aromatic curry is made with fresh shrimp and creamy coconut milk, creating a delicious and satisfying meal.
Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 2 tablespoons curry powder
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 1 tablespoon vegetable oil
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Sprinkle the curry powder and turmeric over the onion and garlic, and stir to combine.
- Add the shrimp to the pan and cook for 2-3 minutes, until they start to turn pink.
- Pour in the coconut milk and stir to combine. Let the curry simmer for 10-15 minutes, until the shrimp are fully cooked and the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the Rukuruku hot over steamed rice or with crusty bread.
