Rukuruku (solomon's Grilled Calamari)
Rukuruku is a traditional dish from the Solomon Islands that features succulent grilled calamari marinated in a flavorful blend of local spices.
Ingredients
- 2 lbs fresh calamari
- 1/4 cup coconut milk
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt to taste
Instructions
- Clean the calamari by removing the head, beak, and cartilage. Rinse under cold water and pat dry with paper towels.
- In a bowl, mix together coconut milk, soy sauce, garlic, ginger, paprika, black pepper, cilantro, lime juice, and salt.
- Add the calamari to the marinade and toss to coat. Let it marinate for 15 minutes.
- Preheat the grill to medium-high heat. Grill the calamari for 2-3 minutes per side, until charred and cooked through.
- Remove from the grill and serve hot. Enjoy your Rukuruku!
