Ingredients

  • 1 pound large shrimp, peeled and deveined

  • 1/2 cup coconut milk

  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas
  • 1/2 cup shredded coconut
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, combine the rum, coconut milk, soy sauce, and brown sugar. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over high heat. Add the garlic and ginger, and stir-fry for 30 seconds.
