Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons rum
- 1/2 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snow peas
- 1/2 cup shredded coconut
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, combine the rum, coconut milk, soy sauce, and brown sugar. Set aside.
- Heat the vegetable oil in a large skillet or wok over high heat. Add the garlic and ginger, and stir-fry for 30 seconds.
