Ingredients

Instructions
- In a large bowl, combine the mixed dried fruits and dark rum. Cover and let it soak overnight, or for at least 24 hours.
- Preheat the oven to 300°F (150°C). Grease and line a 9-inch round cake pan with parchment paper.
- In a separate bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- In another bowl, sift together the flour, baking powder, and mixed spice. Gradually add the dry ingredients to the creamed mixture, mixing until well combined.
- Stir in the soaked fruits, breadcrumbs, molasses, and browning until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
