Rundvlees Soep is a traditional Surinamese beef soup that is hearty, flavorful, and perfect for a comforting meal. This recipe combines tender beef, aromatic spices, and a variety of vegetables to create a delicious and satisfying dish.
Ingredients
- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 celery stalk, chopped
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp paprika
- 6 cups beef broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Stir in the ground cumin, turmeric, and paprika, and cook for another minute.
- Pour in the beef broth and bring the soup to a boil.
- Reduce the heat, cover the pot, and let the soup simmer for 1.5 hours.
- Add the sliced carrots, diced potatoes, and chopped celery to the pot, and continue to simmer for another 30 minutes.
- Season with salt and pepper to taste before serving.
