Ingredients
- 4 large potatoes, boiled and diced
- 3 carrots, boiled and diced
- 1 cup green peas, boiled
- 1 cup dill pickles, diced
- 1 cup cooked chicken, diced (optional)
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
- 4 large lettuce leaves
- 4 large tortillas or flatbreads
Instructions
- In a large bowl, combine the diced potatoes, carrots, green peas, dill pickles, and cooked chicken (if using).
- In a small bowl, mix the mayonnaise and Dijon mustard. Season with salt and pepper.
- Pour the dressing over the potato mixture and toss to coat evenly.
- Place a lettuce leaf on each tortilla or flatbread.
- Spoon the potato salad mixture onto the lettuce leaves.
- Roll up the tortillas, tucking in the sides to create wraps.
- Slice the wraps in half and serve.
