Ingredients

  • 4 large potatoes, boiled and diced
  • 3 carrots, boiled and diced
  • 1 cup green peas, boiled
  • 1 cup dill pickles, diced
  • 1 cup cooked chicken, diced (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • 4 large lettuce leaves
  • 4 large tortillas or flatbreads

Instructions

  1. In a large bowl, combine the diced potatoes, carrots, green peas, dill pickles, and cooked chicken (if using).
  2. In a small bowl, mix the mayonnaise and Dijon mustard. Season with salt and pepper.
  3. Pour the dressing over the potato mixture and toss to coat evenly.
  4. Place a lettuce leaf on each tortilla or flatbread.
