Ruz Malfouf is a traditional Yemeni dish that features spiced cauliflower rice, making it a flavorful and healthy alternative to traditional rice dishes.
Ingredients
- 1 head of cauliflower, grated
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the grated cauliflower to the skillet and stir to combine with the onion and garlic.
- Season the cauliflower rice with cumin, coriander, turmeric, salt, and pepper. Stir well to evenly distribute the spices.
- Cover the skillet and cook for 10-12 minutes, stirring occasionally, until the cauliflower is tender.
- Once cooked, remove from heat and garnish with fresh cilantro before serving.
