Ingredients

  • 1 head of cauliflower, grated
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the grated cauliflower to the skillet and stir to combine with the onion and garlic.
  4. Season the cauliflower rice with cumin, coriander, turmeric, salt, and pepper. Stir well to evenly distribute the spices.
  5. Cover the skillet and cook for 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  6. Once cooked, remove from heat and garnish with fresh cilantro before serving.
