Ingredients
- 1 1/2 cups Arborio rice
- 4 cups vegetable broth
- 1/2 cup dry white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon saffron threads
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- In a saucepan, heat the vegetable broth over medium heat. Once heated, reduce the heat to low to keep it warm.
- In a separate large pan, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
- Add the Arborio rice to the pan and stir to coat the rice with the butter, onion, and garlic mixture. Cook for 2-3 minutes, or until the rice becomes slightly translucent.
- Pour in the white wine and stir until it is absorbed by the rice.
- Dissolve the saffron threads in a small amount of the warm vegetable broth, then add it to the rice mixture.
- Gradually add the warm vegetable broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more. Continue this process until the rice is creamy and al dente, about 20-25 minutes.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Remove the risotto from the heat and let it rest for a few minutes before serving.
