Ingredients

  • 2 cups fresh spinach, chopped

  • Salt and pepper to taste
  • 12 empanada dough discs

Instructions

  1. In a pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the chopped spinach to the pan and cook until wilted. Season with salt and pepper to taste. Remove from heat and let it cool.
  3. Preheat the oven to 375°F (190°C).
  4. Place a spoonful of the spinach mixture and shredded cheese in the center of each empanada dough disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
  5. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with a beaten egg for a golden finish.
  6. Bake in the preheated oven for 20-25 minutes, or until the empanadas are golden brown and crispy.
  7. Remove from the oven and let them cool for a few minutes before serving.
