Ingredients
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 12 empanada dough discs
Instructions
- In a pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the chopped spinach to the pan and cook until wilted. Season with salt and pepper to taste. Remove from heat and let it cool.
- Preheat the oven to 375°F (190°C).
- Place a spoonful of the spinach mixture and shredded cheese in the center of each empanada dough disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with a beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the empanadas are golden brown and crispy.
- Remove from the oven and let them cool for a few minutes before serving.
