Ingredients
- 4 large bell peppers
- 1 cup of Sa Rapita rice
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- 1 teaspoon of paprika
- Salt and pepper to taste
- 1/4 cup of grated Manchego cheese
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, sauté the onion and garlic until softened.
- Add the Sa Rapita rice, diced tomatoes, vegetable broth, paprika, salt, and pepper to the skillet. Cook for 10 minutes.
