Sabah Seafood Curry

Ingredients

  • 500g mixed seafood (prawns, squid, and fish)
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, grated
  • 2 tomatoes, diced
  • 1 can (400ml) coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add the diced tomatoes and cook until they soften.
  4. Pour in the coconut milk and stir in the curry powder and turmeric powder. Let it simmer for 10 minutes.
  5. Add the mixed seafood and cook until they are fully cooked.
  6. Season with salt to taste.
  7. Garnish with chopped cilantro before serving.
