Ingredients
- 500g mixed seafood (prawns, squid, and fish)
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, grated
- 2 tomatoes, diced
- 1 can (400ml) coconut milk
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- Salt to taste
- Chopped cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the diced tomatoes and cook until they soften.
- Pour in the coconut milk and stir in the curry powder and turmeric powder. Let it simmer for 10 minutes.
- Add the mixed seafood and cook until they are fully cooked.
- Season with salt to taste.
- Garnish with chopped cilantro before serving.
