Ingredients

  • 12 large Swiss chard leaves
  • 1 cup long-grain rice
  • 300g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Blanch the Swiss chard leaves in boiling water for 2 minutes, then transfer to an ice bath to cool. Pat dry with paper towels.
  2. In a large bowl, combine the rice, ground meat, onion, tomatoes, tomato paste, cinnamon, allspice, salt, and pepper. Mix well.
  3. Place a spoonful of the rice and meat mixture onto each Swiss chard leaf. Roll the leaves, tucking in the sides, to form neat parcels.
  4. Heat the olive oil in a large pot over medium heat. Arrange the stuffed Swiss chard parcels in the pot in a single layer.
  5. Pour the chicken or vegetable broth over the stuffed chard, cover, and simmer for 1 hour, or until the rice is cooked and the meat is tender.
  6. Serve the Sabaneekh Mahshi hot, garnished with a drizzle of olive oil and a squeeze of lemon juice.
