Sabich Quesadillas

Ingredients

  • Pita bread
  • Eggplant
  • Hard-boiled eggs
  • Tahini sauce
  • Tomatoes
  • Cucumbers
  • Parsley
  • Olives
  • Feta cheese
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat a non-stick skillet over medium heat.
  2. Brush one side of a pita bread with olive oil and place it in the skillet, oiled side down.
  3. Layer the eggplant, hard-boiled eggs, tomatoes, cucumbers, parsley, olives, and feta cheese on top of the pita.
  4. Drizzle tahini sauce over the ingredients and season with salt and pepper.
  5. Place another pita bread on top, oiled side up.
  6. Cook for 3-4 minutes on each side until the pita is golden brown and the filling is heated through.
  7. Slice the quesadilla into wedges and serve hot.
