Ingredients
- 4 pita bread rounds
- 1 large eggplant, sliced
- 4 hard-boiled eggs, sliced
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh parsley, chopped
- 1/2 cup tahini sauce
- 1/4 cup amba (pickled mango sauce)
- 1/4 cup pickles, sliced
- 1/4 cup fresh lemon juice
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and fry the eggplant slices until golden brown on both sides. Remove from the skillet and set aside.
- Warm the pita bread in the skillet or oven.
- Assemble the sabich by layering the fried eggplant, hard-boiled egg slices, Israeli salad (tomatoes, cucumber, red onion, and parsley), tahini sauce, amba, pickles, and a squeeze of fresh lemon juice inside the pita bread.
