Ingredients

  • 4 pita bread rounds
  • 1 large eggplant, sliced
  • 4 hard-boiled eggs, sliced
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup tahini sauce
  • 1/4 cup amba (pickled mango sauce)
  • 1/4 cup pickles, sliced
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and fry the eggplant slices until golden brown on both sides. Remove from the skillet and set aside.
  2. Warm the pita bread in the skillet or oven.
  3. Assemble the sabich by layering the fried eggplant, hard-boiled egg slices, Israeli salad (tomatoes, cucumber, red onion, and parsley), tahini sauce, amba, pickles, and a squeeze of fresh lemon juice inside the pita bread.
  4. Season with salt and pepper to taste.
