Sabra Stuffed Peppers
Sabra Stuffed Peppers are a delicious and colorful dish that combines the flavors of Israeli cuisine with a healthy twist. These peppers are stuffed with a flavorful mixture of couscous, chickpeas, and Sabra hummus, creating a satisfying and nutritious meal.
Ingredients
- 4 large bell peppers
- 1 cup cooked couscous
- 1 can chickpeas, drained and rinsed
- 1/2 cup Sabra hummus
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix the cooked couscous, chickpeas, Sabra hummus, parsley, cumin, paprika, salt, and pepper.
- Stuff the bell peppers with the couscous mixture.
- Place the stuffed peppers in a large skillet and add 1/2 inch of water to the bottom of the skillet.
- Cover and cook over medium heat for 25-30 minutes, or until the peppers are tender.
- Serve the Sabra Stuffed Peppers hot and enjoy!
