Sabra Stuffed Zucchini
Sabra Stuffed Zucchini is a delicious Israeli dish that combines the flavors of the Middle East with fresh zucchini and savory ingredients.
Ingredients
- 4 medium zucchinis
- 1 cup cooked couscous
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped red onion
- 1/4 cup chopped Sabra hummus
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
- In a bowl, mix the cooked couscous, diced tomatoes, parsley, red onion, Sabra hummus, olive oil, cumin, salt, and pepper.
- Stuff the hollowed zucchinis with the couscous mixture.
- Place the stuffed zucchinis on a baking sheet and bake for 25 minutes, or until the zucchinis are tender.
