Sabra Stuffed Zucchini

Ingredients

  • 4 medium zucchinis
  • 1 cup cooked couscous
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion
  • 1/4 cup chopped Sabra hummus
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
  3. In a bowl, mix the cooked couscous, diced tomatoes, parsley, red onion, Sabra hummus, olive oil, cumin, salt, and pepper.
  4. Stuff the hollowed zucchinis with the couscous mixture.
  5. Place the stuffed zucchinis on a baking sheet and bake for 25 minutes, or until the zucchinis are tender.
